Drouin Expressions 13 Ans Fut De Rhum 2018

The Drouin Expressions 13 Ans Fut De Rhum 2018 is a Calvados Pays D'auge made from 30 varieties of cider apples, harvested from Drouin family orchards. The apples are left to macerate in order to obtain the right coloring, while the juice is obtained after a light pressing like the one of champagne, in which only 65% of the total juice is extracted. Spontaneous fermentation is followed by a long maturation of the cider, which is then distilled in the traditional Charentais still. The aging takes place in new barrels for the first 6 years, followed by 7 years in second passage barrels used for the aging of Savanna rum, from the island of Reunion. Bottled in July 2018 for a limited series of 530 bottles.
