Drouin Expressions 6 Ans Fut De Pommeau 2016 is a Pays D'auge Calvados made from 30 varieties of cider apples, harvested from Drouin family orchards. The apples are left to macerate in order to obtain the right coloring, while the juice is obtained after a light pressing like the one of champagne, in which only 65% of the total juice is extracted. Spontaneous fermentation is followed by a long maturation of the cider, which is then distilled in the traditional Charentais still. Aging takes place in ex-Calvados oak barrels for more than 4 years, followed by 21 months in barrels used by Maison Drouin for aging Pommeau de Normandie. Bottled in February 2016 for a limited series of 430 bottles.
